FFwD - Chestnut and Pear Soup + Muenster Souffle Make UP

This soup is not pretty! I guess that's why Dorie didn't include a picture and I don't blame her! Actually, I didn't know what to expect from Chestnut and Pear Soup but its good. Kind of earthy and kind of sweet and more depth of flavor than I expected.  Gary didn't share my favorable impression. He is, however, impressed that we continue to try making soups out of things that shouldn't be soup. His words, not mine. I came close to chopping off the tip of my pinky while slicing onions! It is SO hard to keep a bandaid on the end of your finger!!!

The Muenster Souffles became Camembert Souffles and they are delicious! Really good with the soup too. My bechamel was too thick and lumpy the first time. So I remade it. I had to crack 5 eggs to get 3 eggs cleanly separated! It wasn't my best day in the kitchen!


This little bundle of sweetness could care less about my kitchen troubles. Give him a piece of peanut butter toast and an apple and he's happy! He makes me happy too!

  1. I am sure most of us have days like you just went through. But all made up with the picture of the adorable guy in the end! Your souffle looks good and goes well with the soup to make a good meal!

  2. I made pork with my soup but the souffles would have been nicer… lighter. Great that you enjoyed the soup.

    For me the soup was a winner, too! Bill wouldn’t even try it! I think he is in Gary’s camp! Both your souffle, and soup look luscious! I really enjoyed those souffles. Have a great weekend!

  6. Husbands can be so funny about food. Howard had no interest in trying it. Souffle is a perfect pairing for soup. I'll remember that when I finally enjoy the last container (which I stashed in the freezer for later). Your grandson is adorable. Makes you forget about all your kitchen injuries. I keep burning my fingers and bandaids don't stay on knuckles very well. Have a great week.

  8. Guyla, I wondered how that kitchen threesome was going to work out. I think your soufflé and soup look pretty darn tasty. Sorry about the finger cut. I used a mandoline slicer and took quite a nick out of my thumb while slicing the onions also. Bandaids and cooking don't mix, I agree. Your little guy is a doll. Even I can remember how much fun it was to play in the leaves. Enjoy him. (I think you are.)

  9. First off, your grandson is just adorable !! So glad you included that shot of him. I remember the days of the "leaf shots" with the big piles. So fun. Anyhoo- glad your finger made it. It definitely can be scary prepping some of these ingredients. I actually just threw out my mandoline this week because I could not take worrying about it harming me or, god forbid, one of my guy's actually tries to cook with it at some point. They had not used it to date but like the blow torch for the creme brulee- danger is usually what they gravitate toward :) And you have the line of the week- or should I say your hubby did - with us all trying to make soup out of things that shouldn't be soup. PRICELESS. We actually really did like the results of this one and I will make it again for sure- though not as often as I do those souffles. They are dangerous, I love them so much......

  10. Camembert soufflé - I am up for that. I liked the soup but as chestnuts are an oddity here, it won't be going on the regulars list.

  11. Guyly, what a cute grandson you have - he does look quite happy sitting in this large pile of fall leaves! Your Soufflée looks wonderful and your picture reminds me of the fact that I promised to make more Souflées again soon...and the Pear-Chestnut-Pear Soup was quite a hit at our house and yours looks so smooth and has such a great color - I guess there were split opinins on this recipe.

  13. Your grandson is so cute!!! I love the expression on his face. Gary's comments are very funny. I've been pleasantly surprised by many of the soups, but I can definitely see where he's coming from.
